If you have a box of pasta in your pantry right now and are looking for a recipe that will last a few days in the fridge, this simple recipe for pasta salad rocks. The HH actually made this for a family gathering last December and it was a big hit. The best part though, is that the salad can easily be adapted to what you have on hand.

Ingredients
1 pound tricolor spiral pasta
1 pint cherry tomatoes, halved
1 cup chopped hard salami bits
3/4 cup jarred roasted red peppers
1/2 cup chopped red onion
4 ounces shaved Parmesan cheese
3.8 ounces sliced black olives {1 small can}, drained
8 ounces Ken’s Steakhouse Greek Salad Dressing
Directions
Prepare the pasta per the box instructions for al dente pasta, rinse under cold water and drain. In a large mixing bowl, combine the pasta, tomatoes, salami, roasted red peppers, onion, Parmesan cheese, and olives.
Pour the dressing over the salad and toss to combine. Refrigerate for a few hours before serving {you want the dressing to have a chance to soak into the pasta} and serve chilled. This salad will last for a few days in the fridge, and in my opinion, gets better each day.

I make the same salad, but use Italian dressing. We love it, especially in the summer. I like making it the night before so all the flavors can blend in.

I had a caterer have me shut the kitchen door as she added the secret ingredient to her pasta salad. It was the oil from the olives, she had salad dressing too. And by the end of the evening people were asking what she used in her salad. It worth a try if you like them

My recipe from the ‘70’s for “Noodle Salad” has a good tip: after you drain the pasta, while it’s still hot, toss it with a quarter cup of apple cider vinegar and cover it. Let it sit and absorb the vinegar while you prepare the other ingredients. Just gives it that extra “something!”

I make pasta salad with whatever is in the house. It is good for days. I add meat to my portion each day.

I do a similar salad with whatever veggies I have on hand, some shredded cheese, and italian dressing. My fave veggies are cukes, carrots, onion, green pepper, and broccoli. Sometimes I add in ham. My dh would love it with tomatoes, but I won’t add them cause I hate them!
I made it last week, and laughed, cause it was the first new “recipe” that I made as a newlywed, 23 summers ago! Dh had a company picnic, and the recipe was on the italian dressing bottle, lol! That was back when I followed the exact recipe…measuring out all of the veggies, lol!!! (Minus the tomatoes!). Now I just chop and add till it looks full of enough veggies for me!

We make a similar salad here but add canned artichokes (Costco) and use Olive Garden dressing – delicious!!!

I make something very similar except I use cheese tortellini in place of the pasta.
