I almost feel guilty finding a recipe on a company’s website {Bob’s Red Mill} and then telling you guys to go make the recipe using a cheaper but equally awesome alternative ingredient {Winco’s 13 bean mix, not Bob’s Red Mill}. But seriously it will save you money and taste totally awesome. So I had to share. I guess the PR peeps from Bob’s Red Mill can yell at me later. Not that they have any clue who a little ol’ blogger from Washington is, but I figure I should apologize still the same.
But seriously, the recipe needs no apologies because it’s simply awesome. It’s so flavorful and hearty. It’ll make you long for winter {okay, so it might not have powers that persuasive, but close}.
2 cups 13 bean Soup Mix from Winco
1 ham hock or bits of leftover ham
1 cup onion, chopped
1 {15 oz} can tomato sauce or 1 quart tomatoes
1 tablespoon chili powder
2 cloves garlic
1 teaspoon dried cilantro
1 teaspoon dried parsley
2 1/2 quarts vegetable or chicken stock {can use water instead}
Directions
Dump all ingredients into a slow cooker. Cook on low 6-8 hours or high 4-5. Enjoy!

You know, Bobs has a challenge every year for what they call #Unprocessed… it runs usually mid sept-end of October as October is Unprocessed month. This year, they’ve released a coupon for $3 off any 2 bobs items (the pdf page that Bob’s emails you after you sign up has other coupons on it as well such as $1/1 and others). Its not directly on their site, but it IS available by simply googling. Its on many other blogs and sites already… just google “Bob’s Red Mill October Unprocessed Month” and its in any of the links that come up. If you’re uncomfortable going to another blog you can always go directly to Bob’s site every month and sign up there, they’ll email you a pdf for $1 off any 1 that’s good til the end of that month. Great way to support a sustainable company that is great quality.

I did similar. I have a leftover ham hock and ham and so got a bag of this (not on sale) at Bi-Mart and looked up a recipe and found this.. it’s cooking right now on this cold, rainy day.
