We love a good beef and broccoli stir fry for dinner. We tend to make stir fry at least once a week. It’s kind of my go-to meal. So when the HH decided to make it even easier and cook it in the crock pot, I had to pat him on the back. Easier and just as delicious. If you love beef and broccoli {or even if you don’t}, this recipe offers a healthy, quick meal that my whole family loves! Savory beef, a delicious sauce and some tender broccoli {or any other veggies you want to toss in}? Yum!
Slow Cooker Beef & Broccoli
Description
We love a good beef and broccoli stir fry for dinner. We tend to make stir fry at least once a week. It’s kind of my go-to meal. So when the HH decided to make it even easier and cook it in the crock pot, I had to pat him on the back. Easier and just as delicious. If you love beef and broccoli {or even if you don’t}, this recipe offers a healthy, quick meal that my whole family loves! Savory beef, a delicious sauce and some tender broccoli {or any other veggies you want to toss in}? Yum!
Ingredients
1 1/2 pounds flank steak, sliced thin and cut into 2-inch pieces
1 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
4 cups broccoli florets
2 tablespoons cornstarch
Instructions
Place steak, beef broth, soy sauce, brown sugar, sesame oil, and garlic in a greased slow cooker. Stir a bit to coat beef, cover and cook on low for 4-5 hours or high for 2-3 hours.
About 30 minutes before the beef is done, whisk corn starch and 2 tablespoons of cold water until the corn starch is dissolved. Pour into the slow cooker and stir. Re-cover and cook another 20 minutes.
A few minutes before you’re ready to serve your meal, place a steamer basket over boiling water and steam broccoli, covered, until fork-tender, about 5 minutes {you can also do this in a steamer or in the microwave. Anyway you want to get fork-tender broccoli!}. Drain broccoli and stir it into the crock pot. Serve over rice.

I’d love some slow cooker reviews. My last one just didn’t reach high enough temperatures to be considered safe. It was a total lemon. 🙁

My favorite slow cooker is the Crock-Pot SCCPVL600S Cook’ N Carry 6-Quart Oval Manual Portable Slow Cooker, Stainless Steel. We have two of them and they work great.

Thanks!
I just added that crock pot to my Amazon shopping cart. I’ll try the beef and broccoli recipe as soon as it gets here!

It’s soup season! Soup is so satisfying and inexpensive if it’s mostly veggies. The spices you choose make all the difference.

Need to experiment with adding frozen broccoli directly to crock pot near the end of the cooking time.

I made this tonight fir supper. it got a big thumbs up, even from my son. He was excited to try it when I told him Lucy the Puggle Dog’s mom posted it:). I did reduce the amount of soy sauce since not everybody is as crazy about it as I am.

I make this doubling the sauce recipe and with a pork tenderloin instead of steak. Serve with Jasmine rice. Soooooo good!

What kind of rice would go best with this?
