Brown sugar + chicken + lime juice + slow cooker = my new very favorite crock pot meal. Holy cats was this simple recipe good. And gone. It’s rare we eat an entire slow cooker meal but we totally all went back for seconds and scraped the bottom of the dish. Try and I’m pretty sure you’ll be loading your plate too!
Ingredients
4 chicken breasts
1 cup brown sugar
2/3 cup vinegar
1/4 cup lime juice
3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons water
Directions
In a mixing bowl, combine brown sugar, vinegar, lime juice, garlic, soy sauce, and pepper. Place chicken breast in the bottom of a slow cooker and pour sauce over chicken. Cook on high 4-5 hours or low for 6-8 hours.
Carefully remove chicken and set aside. Pour leftover sauce into saucepan and begin heating over high heat. In a separate bowl, whisk cornstarch and water together and add to the saucepan. Let sauce come to a boil and boil until it starts to thicken and turns into a glaze {it will also thicken as it cools}.
Serve chicken over rice and top with glaze. Enjoy!

I’ve never tried it with dark meat, but I know dark meat typically takes a bit longer. I’d cook it per the directions and then check it to see if it is done, and add time as needed.

I suspect it would still be good, it just wouldn’t caramelize in the same way on top.

I use white but you could use cider and I’m sure it would still taste great.

THANK YOU for this recipe! I made it a few weeks ago, and subbed orange zest and orange juice for the lime juice. It. was. DELICIOUS! And it’s in the crockpot for dinner again tonight! Definitely a keeper! 🙂
