Pasta Fagioli Soup like Olive Garden
Looking for something quick and easy to make? Whip up this Pasta Fagioli Soup in the crock pot and you’ll be all set (or should I say Pasta E Fagioli? I don’t know if the E is important, my Italian is rusty).
Not only is this recipe awesome, but it makes a lot of soup – 2 dinners and 2 lunches for our family of four to be exact (if you don’t want all that soup, then simply cut the recipe in half).
Of course, if you’re in a copycat mood, you could consider Tomato Bisque (like Panera) or KFC’s Cole Slaw Recipe (so good)
But first, Go make this Pasta Fagioli Soup! Seriously. Then come back and tell me how good it was.
Ingredients
1 1/2 lbs ground beef
2 cups dehydrated carrots or 2 large carrots, chopped
1 onion, chopped
2 stalks of celery, chopped
{4} 14 oz cans diced tomatoes {do not drain}
{1} 16 oz can red kidney beans, drained
{1} 16 oz can white navy beans, drained
{2} 32 oz cartons of beef stock
1 teaspoon dried oregano
2 teaspoons pepper
1 tablespoon dried parsley
1 24 oz jar spaghetti sauce
8 ounces small pasta {I used mini bow tie}
Directions
Brown the beef in a skillet, drain the fat and transfer to a large crock pot. Place all the ingredients {except the pasta} in the crock pot and turn it on {High 5 hours, Low 8 hours}.
30 minutes before serving, stir in the pasta and place the lid back on the crock pot.
Once pasta is done cooking, ladle into bowls and serve. YUMMALICIOUS!

I made this for dinner tonight with some homemade dinner rolls, and it was a huge hit. Even my picky 2 year old ate some. I wanted to share how I made it, because I’m a vegetarian. I left out the meat (obviously!) and used Pacific Vegetable Stock instead of Beef Stock. I halved the recipe – except for all the veggies and pasta, for them I used your measurements above. I all fit perfectly in my 6 qt. slow cooker, and cooked in exactly the time you stated. Thanks for an awesome recipe!

Can I ask what size slow cooker you use? Mine is full to the top and I haven’t added the meat yet or the second carton of broth!
