The thing I love most about cookies {aside from the fact that they’re all pretty delicious} is that I can whip up a quick batch of cookies and be done from start to finish in 20 minutes. I like when delicious results come without a huge time commitment. Those are my kind of treats!
Today I wanted a quick snack and I was craving something sweet. These cookies hit the spot. If you are even a semi coconut fan, these will become a fast favorite!
Soft and Chewy Coconut Cookies
Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 1/3 cups flaked coconut
Instructions
Preheat oven to 350 degrees F. In a small bowl, combine the first 3 ingredients: flour, baking soda, and salt, and set aside.
In a medium mixing bowl, cream together the butter, and both sugars until smooth. Add the egg and vanilla and beat until light and fluffy. Slowly pour in the flour mixture, then add the coconut, stirring until combined. Drop about a teaspoonful of dough about 2 inches apart onto an ungreased baking sheets {I use silpats}.
Bake for 8 to 10 minutes or until golden. Cool before serving.

Crystal, the Rachel Ray TV show website has a 2 ingredient chewy macaroon recipe. The only thing I do differently is to use Unsweetened coconut because with sweetened ones are too cloying. And I make them half the size because they are so rich.
