If you’re looking for an easy dessert to bring to a holiday gathering or work this week but want something you can make in a jiffy and will serve a boatload of people, this recipe for soft and moist molasses gingerbread just might be the ticket.
I LOVE gingerbread, and really like that it can be cut into bite sized portions and popped into the freezer if it doesn’t get eaten right away.
Served warm with a scoop of ice cream or a dollop whipped cream…. it’s a little bit of Christmas in every bite.

PrintSoft and Moist Molasses Gingerbread
Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. ginger
- 1 tsp. cinnamon
- 1 tsp. salt {I used ground sea salt}
- 1/2 cup melted shorting {I used Crisco} or butter
- 1 egg, beaten
- 1 cup molasses
- 1 cup hot coffee or water
Instructions
Preheat oven to 375 degrees.
Grease a 9 x 13 baking pan and set aside.
In a bowl, sift together the flour, sugar, baking soda, baking powder, ginger cinnamon and salt and set aside.
In a large bowl mix together the melted shortening, egg and molasses until nice and smooth.
Slowly stir in half of the flour mixture, then half of the hot coffee, then the remaining flour mixture and the rest of the hot coffee and stirring together until smooth.
Pour batter into the prepared baking pan, smooth out and then bake at 375 degrees for 25 minutes or until a toothpick inserted into the center comes out clean.
Cool on a wire rack, slice, and sprinkle with powered sugar.

Iām having a very hard time finding molasses these days. Is there a comparable alternative that may work?

Health food stores often stock it. Depending on the recipe, honey, maple syrup, or dark brown corn syrup can work instead, but they do have a slightly different flavor.

Can you check the ingredients in this recipe? I just prepared it and the dough is not as thick as shown in your picture. It is very runny. I’ll let you know how it turns out when I take it out of the oven.

I commented yesterday about the batter for this cake and wanted to let you know that the cake turned out very nice. Everyone enjoyed it. Im not sure why my batter was so much more “liquidy” than the picture of your batter, but it was fine.
