Whoa Nelly it’s getting cold out there! I don’t know what it’s like in your neck of the woods but here in Mid Coast Maine it’s downright chilly. It’s time to pull out the Bean boots and sweaters because soup season has arrived, that’s for sure!
I made a big pot of chicken soup last Sunday and so we started off the week feasting on that along with some Irish soda bread. Homemade chicken soup, it doesn’t get any better than that.
Well maybe it does… Because we also cracked open two jars of the split pea and ham soup we had pressured canned last summer and enjoyed some of that too.
And then after we polished off the soups, we moved on to some of the Trader Joe’s freezer meals I had picked up on our last shopping trip down south. We both really like their teriyaki chicken. It’s not quite as good as take out, but it’s pretty close.
The Trader Joe’s hatch chili mac and cheese someone had recommeneded was crazy good too {and totally worth it} too.
We also gave the spinach artichoke dip a try.
And at $2.99 for an instant appetizer, we thought it was fantastic. And probably the sort of treat that would be nice to have on hand in case someone popped by. All you do is zap it in the microwave for a few minutes and it’s ready to serve.
And we liked the portion size too.
The next day we tried Trader Joe’s hummus with roasted peppers. And it was another winner!
The HH whipped up some fried cabbage and bacon.
We also worked on our stash of Brussels sprouts from that whole stalk I picked a few weeks ago. Rice and sprouts… What a boring dinner.
And last but not least… There was a blackberry pie. And it was glorious let me tell you! 🙂
So it was a good week in the meal department here at Camp butterfield. Lot’s of homemade soup, a few freezer meals, pickety bits and dip and plenty of vitamin C thanks to the pie. 🙂

We’re going extremely simple for Thanksgiving, but the big food news around here is that after 7 months of daily immunotherapy, our 16 month old was able to eat baked Mac and cheese last night and not have an allergic reaction to the milk or egg in it. In addition to the progress on the food allergies, this opens up several more possibilities for dinner options that had been off the menu for months.

A go-to meal is the tikka masala pizza – tikka masala sauce on naan bread w/ chickpeas, butternut squash, feta cheese, spinach. Leftover spaghetti squash was substituted for the butternut; swiss chard was substituted for the spinach. Delish. The leftover chickpeas were made into hummus with horseradish beets. Also delish. I have the luxury of living alone so can experiment with these combinations & substitutions. I just ate the last of a potato/lentil soup. The next soup: carrot rice.

That pie though!!!! We’re having our usual big family pot luck at our place. I’m making my usual crock pot cream corn. It’s perfection and leaves the oven open. I’m also providing a pie, probably Costco. And I need a good recipe for stuffing. My daughter likes it with apples/cranberrys and HH likes cornbread.

Such a beautiful pie! Last night I made biscuits and gravy and it was well appreciated by everyone. My teenager said “it’s so good but so filling.” I responded, “It’s a stick to your ribs kind of meal,” and was surprised that my kids had never heard that phrase before. Then later that evening I was dancing with my other son and accidentally stepped on his foot and said, “Sorry, I guess I have two left feet.” He looked at me with a puzzled expression. My 12 year old had never heard that phrase before, but I checked with my 15 year old and he was familiar with it.

I just made a recipe of canned bruschetta for my daughter coming home from Texas. She loved it so much, I found a small grocery store here in
the Birmingham area with a pile of Rona’s. Where you had to much rain, we had a very dry summer in central Alabama.

I had an interesting shopping experience today. I had an Amazon return, and it directed me to the Amazon Fresh store-which happened to be having a grand opening. It weird-and probably wold not return, I bough only the special grand opening priced items, had a $10 coupon plus 15% off for being a prime member.

I made the Copycat Panera Tomato Soup. I didn’t have any half and half and googled to see if there was a way to turn non fat milk into something similar to half and half. Did you know you could add cream of tartar to thicken milk for soup? The soup was very creamy and delicious! We had that with garlic bread. It was a hit!
