They say having a plan is a key to success. Want to know what else is a key to success? These scones. So planning ahead to make these scones the night before is pretty much setting your whole day up for awesomeness. Knowing that the whole fam loves scones but not wanting to get up at the crack of dawn to make them for breakfast, making these the night before is the perfect solution.
Slap some jam on them and they are seriously the best way to kick off your morning. And since you already made them the night before, you not only got to enjoy some crazy good scones, but you got to sleep in too. Score!
PrintSour Cream Scones
Ingredients
2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, frozen
1/2 cup sour cream
1 large egg
Instructions
Preheat oven to 400 F. Line a baking sheet with a silpat or parchment paper and set aside.
Combine dry ingredients {first 5} in a mixing bowl. Carefully grate frozen butter into flour mixture using the large holes of a box grater. Toss the mixture thoroughly to combine until it resembles a coarse meal.
In a separate bowl, whisk sour cream and egg together until smooth. Combine wet and dry ingredients and gently mix until large dough clumps form. Work the dough with your hands until a ball forms {be patient here because you might think the mixture is too dry to form a ball, but trust me it does come together}.
Press ball onto a floured surface, pushing down until a circle about 8 inches is formed {the dough should be about 3/4 inch thick}. Sprinkle with sugar and then cut into 8 triangles. Place the triangles onto the prepared baking sheet about 1 inch apart. Bake about 15 minutes or until golden.
I think these scones are best served with homemade jam. Here’s my favorite recipe: Fast and Easy Strawberry Freezer Jam

Those look awesome! In fact, I might make some right now.
Side note: I find plain yogurt a great replacement for anything requiring sour cream, including mexican food and in baking! Makes it at least feel healthier, and I always have plain yogurt on hand. So I’ll probably be making some Yogurt Scones in a bit!

We enjoyed a batch of these yesterday for breakfast. They were so easy and delicious and will be one of our favorites for the future and for gifts and for guests. Great way to use that little bit of sour cream left over from other meals and recipes.

I made these a couple weeks ago and now I have to make them weekly per the families request! Which I am perfectly fine with. Delicious!!

Delicious! Even though I forgot to sprinkle them with sugar and I replaced a 1/2 cup of the white flour with whole wheat! And I used light sour cream because that is what I had on hand.
