Last week I made a loaf of spelt bread recipe using some of the spelt flour I picked up from Maine Grains back in December. The bread turned out so good {and so many of you asked for the recipe} that I’ve decided to share the recipe here on the blog.
Grab a little butter, maybe some jam and enjoy a slice of this hearty bread while it’s still a little warm from the oven and you’ve got yourself a nice treat.
This isn’t the bread you’d want to make a grilled cheese sandwich with.
While this bread toasts up nicely, the HH and I both felt this spelt bread should be served with something more substantial, like beans or a big bowl of beef stew.
It’s the kind of bread you want to come home to…
The kind of bread you’d want to see on the table after a long winter’s day doing chores out in the frozen tundra, or working in the coal mines or something like that.
I guess what I’m trying to say is, this is a hearty bread.
Spelt bread is really, really good!

Ingredients
- 3 1/2 teaspoon instant yeast
- 1 ¾ cups warm water
- ½ teaspoon maple syrup
- 1 teaspoon salt
- 1 ¼ cups whole grain flour
- 2 ¼ cups spelt flour
Instructions
Place the yeast in a large mixing bowl. Add the warm water and stir until the yeast has dissolved.
You may now add the maple syrup and salt and stir again.
And then add the whole grain flour and stir until you have a nice smooth and very wet batter.
Next add the spelt flour and stir until you have a nice dough. The dough will still be a bit sticky at this point.
Cover the mixing bowl with a clean dishcloth and place in a warm spot for 45 minutes.
Grease or line a 9×5 bread pan and place the dough in the bread pan.
Cover with a clean dishcloth and let sit for 20 minutes.
Preheat the oven to 475F.
Bake in the lower part of the oven for 10 minutes, then lower the oven temperature to 400F and bake for an additional 20 minutes or until the bread is a nice golden color.
Set the bread pan on a wire rack, remove the loaf from the pan and allow the bread to cool on the wire rack.

Does this dough not require kneading?
It looks so easy to make. I want to try it so I’m just making sure before I do.
