I almost feel guilty serving these for breakfast because they are more like dessert. And not just any dessert. A dessert you have to go back for seconds and thirds and, well, you get the idea. We ate a TON of these. Even though Jillian Michael’s would yell at me, my kids will probably nominate me for Mother of the Year. So I’ll keep serving them. Do you ever do that? Serve dessert for breakfast? Do your kids think you’re the coolest when you do?
PrintStrawberry and Nutella Crepes with Bananas
Ingredients
- 1 cup flour
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 3 eggs
- 2 cups milk {I used 2%}
- 2 tablespoons butter (, melted)
- 3 cups fresh strawberries (, sliced)
- 3 bananas (, sliced)
- Nutella
- Powdered sugar
Instructions
- In a mixing bowl, combine flour, sugar and salt, and set aside. In a separate bowl, beat eggs and milk together with an electric mixer or whisk rapidly. Stir in flour mixture and beat until smooth. Add in melted butter and stir until combined.
- Grease a skillet or griddle {I used coconut oil} and heat over medium-high. Scoop batter onto hot griddle, using approximately 2-3 tablespoons for each crepe {I like to use a 3 tablespoon cookie scoop}. Spread batter as thinly as possible with a spatula. Cook until golden brown on both sides.
- While still warm, spread a layer of Nutella onto a crepe. Top with sliced strawberries and bananas and sprinkle with powdered sugar. Serve warm for any meal {or even for dessert!}.

Sounds yummy! I might add some (homemade) Greek yogurt, plain like sour cream or vanilla, or cottage cheese to increase the calcium and protein. No strawberries? Try canned pie filling… For the low-carb set, a flat flax or almond square would also work, but no pie filling, of course.

Serve dessert for breakfast? Of course I do! Leftover cake or pie is perfect breakfast food! If anyone questions it, I mention coffee cake is cake, and these desserts are certainly better than greasy donuts.
Even pumpkin cookies make a nice breakfast!
As for increasing calcium… My family would eat the crepes with a glass of milk.

If you think about all of those sugary crap cereals out there (fruit loops, cocoa puffs, and so on), donuts and Poptarts, a slice of homemade pumpkin pie and a glass of milk is a great breakfast For special occasions, like a birthday, first and last days of school, my son get a homemade waffle, sliced strawberries, a small scoop of ice cream and whipped cream on top of it. Really how is that any worse than maple flavored high fructose corn syrup “syrup”?

Homemade crepes with Nutella with strawberries on the side in my daughter’s lunch box today. Another large batch wrapped in the freezer for future breakfasts and lunches. I use cinnamon, vanilla and a touch of sugar (for crispy edges). I’m working on a savory version. As everyone has said…better than other breakfast options and we don’t like the squishiness of pancakes so crepes are a great alternative 🙂
