- 1 cup flour
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 3 eggs
- 2 cups milk {I used 2%}
- 2 tablespoons butter (, melted)
- 3 cups fresh strawberries (, sliced)
- 3 bananas (, sliced)
- Nutella
- Powdered sugar
Instructions
- In a mixing bowl, combine flour, sugar and salt, and set aside. In a separate bowl, beat eggs and milk together with an electric mixer or whisk rapidly. Stir in flour mixture and beat until smooth. Add in melted butter and stir until combined.
- Grease a skillet or griddle {I used coconut oil} and heat over medium-high. Scoop batter onto hot griddle, using approximately 2-3 tablespoons for each crepe {I like to use a 3 tablespoon cookie scoop}. Spread batter as thinly as possible with a spatula. Cook until golden brown on both sides.
- While still warm, spread a layer of Nutella onto a crepe. Top with sliced strawberries and bananas and sprinkle with powdered sugar. Serve warm for any meal {or even for dessert!}.
