Strawberry muffins are on the menu this morning at our house. I love making muffins ahead of time on a Saturday night so we can enjoy a lazy Sunday morning and not have to worry about what to make for breakfast. Once you have tried this recipe for strawberry muffins, you will never try another strawberry muffin recipe again. It’s that good!
Strawberry Muffins with Oatmeal Crumb Topping
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 1/4 cup strawberries (, chopped)
- 1/4 teaspoon cinnamon
- 1/4 cup sugar
- 1/2 cup oatmeal
- 2 tablespoons butter (, cut into bits)
- 1 teaspoons ground cinnamon
Instructions
- Preheat oven to 400 degrees
- Line muffin tins with baking cups or grease tins with cooking spray.
- In a large bowl mix together 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Add oil, egg, milk and stir until there are no lumps. Fold in strawberries. Set aside.
- In a separate bowl mix together the ingredients for the crumb topping with your fingers {or a fork if you don’t like to touch your food} until nice a crumbly. Is crumbly even a word? Hmm.
- If you have major OCD like me, use a 3 tablespoon cookie scoop to fill your muffin tins, if you don’t, just fill the tins 2/3rd of the way full and sprinkle with crumb topping mixture.
- Bake the best strawberry muffins on the freakin’ planet for 20 minutes until they are lightly browned.
- Cool slightly and serve warm.
Notes
These recipe makes approx. 12 muffins and these freeze exceptionally well!

Good morning!- those look wonderful. I think I’m going to try them with mulberries – there’s a bunch of them growing at the edge of my developement and in the park behind, so I’m planning on picking lots and making jam and freezing them.

It’s kismet! I happened to hop on the computer while waiting for something to bake, and I also bought strawberries yesterday. I have a little bit of blueberry puree from last week’s baking project left so I’m going to pay it forward into these muffins since the oven is already preheated. Great timing, Mavis!

Strawberries were buy 1 container get 1 free at the grocery store last week. I grabbed two and managed to eat one. The other container was starting to go south and this was the perfect solution for them! Made these at 10pm on a whim. They are delicious. This will make for a great breakfast tomorrow (and the next few days since you say they freeze well!).

I see there are two measurements for cinnamon. Is 1/4 tsp to fold in and 1 tsp for the topping?

Mavis, unless you use every bit of all the jams you make, I think you ought to consider putting up a sign (big enough to be read from the road) that offers Jams for sale and lists the types. You make more than we could ever eat, but even with the varieties I make, I’d stop and buy something like your Lilac jam because I’d have to like it before I’d ever consider making a whole batch. In other words, I think they’d sell.
