Let me tell you Bob, the flavor combination in this salad is freakin awesome. I made it to take to a luncheon but ate half of it, so I had to whip up a second batch. I suspect if The Girl got her hands on this, I would have to whip up a 3rd batch. It’s a light summer salad that packs a powerful flavor punch! A must bring to your next summer BBQ!
Ingredients
Salad
1 {15 oz} can chickpeas, drained and rinsed
1 cucumber, diced
3 green onions, finely chopped
1 cup grape tomatoes, quartered
1 tablespoon fresh parsley
Salt and pepper to taste
Dressing
2 tablespoons Tahini
1 tablespoon lemon juice
1/4 teaspoon cumin
1 clove of garlic, minced
Instructions
Combine all salad ingredients in large bowl. In a separate bowl, whisk all dressing ingredients until combined. Pour dressing over salad and toss to coat. Season with salt and pepper to taste. Enjoy.
