I love Lacy’s $20/$20 Challenge submission. It’s great to see an ex-extreme couponer like myself shift her food priorities. Here is Lacy’s story:
Hi Mavis, I started following your blog about 3 years when the extreme couponing craze was huge. I love that you have evolved into a healthier way of eating, and I have followed you in that journey. In the last 3 years I have started canning produce from both my garden and farmer’s markets.
Here are a few pictures of my pantry and dry food storage. I keep my blue vintage mason jars on the counter in a useful display, along with my kombucha that I ferment. I keep the bigger jars in the cabinet above along with my continuous brew kombucha.
My fridge is made up mostly of fresh produce and leftovers. I keep mason jars with leftovers in the freezer for lunch for my husband and bags of frozen produce.
Our chest freezer usually is equipped with deer from my dad and step mom when they have extra available, extra frozen produce, and extra meat when I can get it on sale. I would love to start buying fresh beef but have to figure out how to work it into our budget!
Our root cellar room in our basement is my favorite part of the house and one of the main reasons we bought it!
I keep all of my canned food in here and hope to have lots more this year.
I cook as much as I can from our pantry throughout the winter.
We also have chickens that will hopefully start laying eggs this spring and hope to get chickens to raise for meat this spring.
