- 1 package {16 oz} strawberries (, hulled and quartered)
- 1/4 cup plus 2 tablespoons sugar (, divided)
- 2 1/2 cups all-purpose baking mix {like Bisquick}
- 1/2 cup mini chocolate chips {I used semi-sweet}
- 2/3 cup buttermilk
- 1/4 cup unsalted butter (, melted)
Instructions
- Preheat oven to 425F. Toss half the strawberries with 2 tablespoons sugar and set aside.
- In a mixing bowl, stir together baking mix, chocolate chips, 1/4 cup sugar, buttermilk, and butter until blended. Using a 1/3 cup measure, scoop 6 shortcakes onto an ungreased baking sheet and bake until golden brown or about 15 minutes. Cool completely on wire rack.
- Mix sugared strawberries and plain strawberries. Cut shortcakes crosswise in half. Spread strawberry pieces on bottom half and top with whipped cream. Top with other half of shortcake. Place a sliced shortcake on a plate, add fresh whipping cream and strawberries and serve. Enjoy!
