I know you’re in the middle of Thanksgiving prep madness, but I wanted to give you a little something to think about while you chopped and mashed and boiled: leftovers. Chances are you’re going to have a large amount of turkey taking up residence in your fridge. I have the perfect solution for you.
I’ve tried a lot of leftover turkey recipes, but none I’ve loved as much as this one. My whole family gobbled it up {no pun intended!}. In fact, long after the leftover turkey was consumed, they begged me to make it again. It’s a keeper.
Ingredients
12 ounces rotini pasta noodles
1 {10 1/4 ounce} can cream of celery soup
1/2 cup mayonnaise
3/4 cup evaporated milk
1 cup frozen peas {optional}
1 teaspoon black pepper
2 cups shredded turkey {cooked}
Topping
3/4 cup cheddar cheese, grated {I used a cheddar & mozzarella mix this particular time}
1/2 cup buttered bread crumbs {1 Tab. melted butter + bread crumbs}
Directions
Preheat oven to 350 degrees
Bring a large pot of water to boil and cook noodles until al dente. Drain.
Mix all of the ingredients together in a large bowl a large bowl. Then pour into a 9×13 buttered casserole dish. For the topping, sprinkle 3/4 cup cheddar cheese over the top then add the buttered bread crumbs.
Bake for 25 minutes or until nicely browned.

Made this tonight with leftover Thanksgiving turkey and it is soo good. The only problem is that I don’t want to stop eating it. 😉

Okay so I thought I had everything for this recipe…nope. Anywho, I winged it. Instead of cream of celery I used cream of chicken soup, instead of peas I used peas and carrots, and instead of bread crumbs I used Ritz crackers. So I hope it turns out as good as your recipe; it is in the oven even as I type. It was kind of fun rummaging around for substitutions. I’ll let you know if it was a flop. Cheers!
