It’s quick, easy and can be made ahead of time if needed. Which, if you ask me, is perfect for this time of year. Sometimes I’ll even swap out the peas for green beans just to make things exciting. 🙂

Ingredients
Casserole
8 ounces egg noodles {I used No Yolks brand}
1 {10 1/4 ounce} can cream of celery soup
1/2 cup mayonnaise
3/4 cup evaporated milk
3/4 cup cheddar cheese, grated
1 cup frozen peas {optional}
1 teaspoon black pepper
2 cups cooked, cubed turkey breast
Topping
1/2 cup cheddar cheese, grated {optional}
1/2 cup buttered bread crumbs or Ritz Crackers {1 Tab. melted butter + bread crumbs}
Instructions
Preheat oven to 350F.
Bring a large pot of water to boil and cook noodles until al dente. Drain.
Mix all ingredients for the casserole together in a large bowl and pour into a 9×13 buttered dish. For the topping, sprinkle 1/2 cup cheddar cheese over the top then add the buttered bread crumbs {bread crumbs with a 1 tablespoon melted butter combined}.
Bake for 30 minutes or until nicely browned.

I did something different with the turkey yesterday. I wrapped it in bacon! I saw an article about how Gordon Ramsey makes his turkey, so I tried it. In the past, sometimes the turkey meat would come out dry – but not with the bacon wrapped around it! It was really moist (even the turkey leg) and the bacon gave the turkey a little extra flavor. I consider it a success!

2 days before Thanksgiving my refrigerator died. Fortunately I wasn’t hosting the family this year, our son and DIL did. But I couldn’t take home any leftovers either. So, my plan now, after our new fridge gets here next week, is to buy a small whole turkey breast, and we will make our own “leftovers”. That should be easy, it’s just hubby and me so a whole turkey breast should provide that. This recipe might be on the menu.

I think I will throw that together tomorrow and divide it into 3-4 loaf dishes and put all but one in the freezer for later. I have everything in the pantry so thanks for sharing the recipe!

I may make that soon. We are eating a breast, but I have a small, 12-pound turkey in the refrigerator that I scored for free. I always put green beans in anything instead of peas since I am allergic to peas. But, I do love green beans.

I made this recipe, but used 2 cups of home made béchamel sauce and omitted 1 can cream of celery soup , 1/2 cup mayonnaise , 3/4 cup evaporated milk. I also added sautéed mushrooms and a little diced onion. It was 92 year old Mom approved! Counting this as a turkey leftover win! Thanks for sharing this recipe.

I made a thanksgiving/turkey pot pie using left overs and store bought pie dough. A local restaurant did this and sold them before Thanksgiving it hit all the notes, and used up my leftovers when I did it at home. This looks great too!!!
