The HH made this three bean salad with a creamy balsamic dressing the other day and man oh man was it good! So good that I have pretty much been eating it for lunch everyday since he made it. 🙂
This three bean salad with a creamy balsamic dressing is the perfect recipe to bring to a potluck or to serve a crowd. If it’s just you and another, you can just halve the recipe.
We served it with Ritz Cracker chicken the first night, but I would imagine the salad would make a great side dish to practically anything. Well done HH, you’ve made another winner!

Ingredients
2 pounds fresh green beans, trimmed and cut into 2-inch pieces
1/2 cup balsamic vinaigrette
1 tablespoon horseradish mustard
1/4 cup sugar
1 garlic clove, minced
3/4 teaspoon salt
2 {15} ounce cans kidney beans, drained and rinsed
2 {15 ounce} cans cannellini beans, drained and rinsed
1/2 sweet onion, sliced
5–6 fresh basil leaves, shredded
fresh cracked pepper
Instructions
Bring a large pot 2/3 full with water and bring to a boil. Add green beans and cook until tender {about 3-4 minutes}. Drain and then place beans in a bowl of ice water to cool. Drain and pat dry.
In a large bowl, whisk vinaigrette, horseradish mustard, sugar, garlic and salt until the sugar is dissolved. Add canned beans, green beans and onions to vinaigrette and toss to coat.
Refrigerate, covered, at least 4 hours. Stir in shredded basil and a little fresh cracked pepper just before serving. Yum yum yum.

I’ve made this before but I canned mine. I didn’t use balsamic vinegar though. I love it. I’m going to have to try this. I did use the fresh green beans. Yummy!

When you say horseradish mustard, are you referring to the prepared horseradish that is mainly vinegar and horseradish? I buy a jar every year to mix with sour cream for my Christmas Eve prime rib meal. I love three bean salad and make it often but with vinegar and sugar. It’s not creamy thugh. Let me know about the horseradish and I will try it for sure. Thanks.
