While Heather and I were on day 2 of our mini holiday last week, we decided to make the most of our girls weekend and fit in as many bakeries, farmer’s markets and thrift stores as we could. And well, one place stood out from all the rest… Tinder Hearth Bakery in Brooksville, Maine.
I have some good news and some bad news. The good news is that the facilities, the pastries, the bread and the bakers were top notch.
The bad news is I was SO BUSY looking around at all the bread on the shelves and the guy making the almond croissants in the kitchen area and trying to figure out how many of the gorgeous pastries I was going to buy, that I didn’t hear a single word the baker told us about his process for his wood fired naturally leavened bread.
I do think some proofing baskets are in the HH’s future though, I’ll tell you that.
Just look at all that crusty bread on the racks. How anyone could buy a regular loaf of bread at the grocery store after having real bread is beyond me.
Because our visit was in the middle of winter, there wasn’t a seating area and the entire inside of the building was filled with racks and bread. But during the summer months, there are oodles of picnic tables and a patio area that is set up along with a small concert space for local musicians.

I don’t even know what this was… blueberry and some sort of magical cream with slivers of almonds? I should have bought 10.
You can never go wrong with an almond croissant.
May favorite pastry though {we bought 6!} was the pear tart and Heather’s favorite was the apple turnover. She basically said they could have put a piece of shoe leather in the pastry and it still would have been fabulous! 🙂 🙂 🙂
This place… Tinder Hearth Bakery in Brooksville, Maine is worth the trip. Seriously. These people know what they’re doing and it is SO WORTH the drive. I’m already looking forward to my next visit there.

We use the proofing baskets all the time, love them! Artisan Bread in 5 Minutes a Day, and the Tartine Bread books have some of my favorite recipes.
