It was a good week in the meal department here at Camp Butterfield. I was able to stock up on Trader Joe’s produce and enjoy a few ready made meals while continuing to work on getting all my wool dyed for the summer and fall season.
A small victory if you ask me. Here’s what we ate.
Costco chicken skewers and rice.
Leftover rotisserie chicken {from the freezer} salted potatoes and Trader Joe’s asparagus risotto.
Mel’s {not so} Drunken Beans. I used dried beans instead of canned and added an extra scoop so now I have extras in the freezer to use on a night I’m too busy to cook.
The HH’s birthday potato skins.
Beecher’s Mac and Cheese. THE BEST STUFF ON EARTH!
Dried fruit. Always a winner.
Trader Joe’s $64.61
I was down south so I stocked up on produce and a few favorites at Trader Joe’s.
I love the bagged quantities of produce they offer. They’re just the right size for the two of us. Not too much, not too little.
This week I plan on making a couple more salads, the butternut squash raviolis, a lasagna I have in the freezer and maybe some quesadillas. That’s about all I have figured out so far.
I have about 2-3 more weeks to go until I get all my wool dyed and patterns drawn and then I’ll be back in the kitchen trying out new recipes and PLAYING in the dirt.
I’m excited!!! Spring is on its way and I plan on spending A LOT of time outside this summer. I can’t wait.

My youngest daughter lives about 4 1/2 hours away so this past Saturday we met in Charlottesville (VA) and spent the day together. Had a great lunch and got to go to Trader Joe’s. I stocked up on all the things and ate some of them already. They are soooo good.

I was still recovering this week from all the driving last week, I put 1000 miles on the car (weep). The car is a nice ride, however just sitting that long put me into a lot of pain, plus the worry and stress kicked in my fibro.
So, I made easy meals, and softer foods for my brother who had to have 4 teeth pulled right before his surgery. Here’s what we ate:
Scrambled Eggs with sausage patties, broccoli cheddar soup with bacon, sloppy joes (no bun) over cauliflower tater tots with cheese, and sheetpan jambalaya with cauliflower rice instead of regular rice. Remaining days were filled with leftovers and a burger with salad at mom & dad’s.
