You know that moment when you make something and while you’re still eating what you’ve just made you, are already looking forward to the next time you’ll have it again? Well that’s what both the HH and I thought about this turkey chowder.
Not only was it such a simple and straightforward recipe to make, but it was NOURISHING as well. The chowder left us wanting another helping and we both walked away from the table looking forward to having the leftovers for lunch again the next day.
So basically, if you don’t have any leftover turkey you need to use up, I highly suggest you add turkey breast to your grocery list. This is a recipe you’re going to want to make… over and over again. Trust me, it’s a keeper!
Ingredients
2 tablespoons butter
1/2 tablespoon olive oil
1/2 cup onion, diced
1 cup peeled carrots, sliced
2 cups leftover cooked turkey, chopped
3 russet potatoes, peeled and cut into bite size cubes
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 can (15.25-ounces) sweet corn, drained and rinsed
1 can (14.75-ounces) cream style sweet corn
2 cups chicken broth
3 cups 2% milk {whole milk works great too, 1% or fat free does not}
fresh parsley or green onions, chopped for a garnish
Directions
Saute onions and carrots in butter and olive oil in a large pot over medium-high heat until tender. Add the turkey, potatoes and seasonings and give it a stir.
Then add the corn, chicken broth and milk and bring the mixture to a boil. Reduce the temperature to low and cover. Simmer for 20 -25 minutes until the potatoes are tender. Be sure to stir the chowder occasionally.
Remove the pot for the heat, butter some toast {or pull out a sleeve of Ritz crackers} and serve warm.
This truly is the perfect soup for a late fall or winter day.

Brenda, I contested my Zaycon charges (I had about 6 outstanding when they went out of business!) with my credit card company, sending them my email confirmations from Zaycon and the email stating that they went out of business. The CC company told me it would take about six-eight weeks, and it did, but they were finally all resolved and I was not charged.

The recipe was delicious. We served it with homemade bread. A couple of changes we made/will make for next time. It took our simmering time 2xs as long b/c I didn’t cut the carrots and potatoes small enough. I will cut them really small next time. Hubby added a bay leaf. We added extra salt. I think you could also do this with chicken, particularly some nice thighs for added flavor. Happy to finally have a use for all those creamed corn cans I got in my couponing days. Will have to give this a try!

Linda Sand, I feel your pain. When I was young and newly married, my husband told me he would butter the toast for me, as “it takes you too long to butter it.”
I told him to butter his own because I wanted mine with butter to the edges! (He now butters his the way I do: to the edges! Funny what almost 50 years will do!)

Very similar to my corn chowder recipe except I fry up a couple strips of bacon and sauté the veggies in the bacon grease for added flavor and also include 1/2 cup of celery. I crumble the bacon on top when serving or sometimes just add to the chowder. A real comfort food for when our wind chill temps dip down to -45 degrees like is predicted for tonight.

Thank you so much for recipes!!! The cherry almond jam is all gone. Next time I’ll make more. The Ritz crusted chicken tenders (with honey/mustard sauce) is terrific. The meatloaf is a real winner. Now this chowder is amazing. I used chicken which I slow cooked on stove most of day. I’ve been feeding flu-ridden family soup but they really enjoyed chowder so did I!!!

Oh Mavis, thank you for this recipe. It was delicious! I used the last of my turkey bits in the freezer from Christmas like Becky. I also used whole milk leftover from eggnog that I had frozen. I usually use fat free milk in recipes and wasn’t sure how to use up the whole milk. This was perfect. It made it so rich and creamy 🙂 I think the next time I make it I will double some of the ingredients so we will have more leftovers.
