Winter soup recipes … Anyone?
Another round of snow is headed our way and all I can think about is making a big pot of soup, staying in my pj’s and working on my hooked rugs.
Winter is here… And in full force, and I’m loving it. Okay, so maybe not the sound of the snow plows going by at 4 am but hey, you can’t have everything, right? 😉
So if you love soup as much as I do and are looking for a few winter soup recipes to fill your belly and warm up your kitchen, lucky you, because today I am sharing 7 of our favorites.
Here they are, in no particular order:
Copycat Panera Cream of Chicken and Wild Rice Soup
Okay, I know I said no particular order, but this cream of chicken and wild rice soup recipe is probably our all time favorite winter recipe.
Thick, creamy and filling. And the recipe makes enough so they’ll be leftovers for the next day.
Copycat Panera Tomato Bisque Soup Recipe
This tomato soup recipe has been a favorite of mine for years. My husband usually makes it for me and he knows the recipe by heart. ;).
Perfect served alone or alongside a grilled cheese sandwich. It’s perfect.
My husband LOVES this hearty cheeseburger soup!! It really is like eating cheeseburger!!
Easy Chicken Chili {made with Costco canned chicken}
Insanely easy to make, this chicken chili is great when your in a hurry. Plus, it freezes well too!
Another winner! We’ve made this loaded cauliflower soup a few times now for guests and it’s been a hit each time.
People don’t even know there is cauliflower in there until you tell them, which makes serving this soup even more fun.
Haddock is a big deal here on the east coast, and so is chowder. If you don’t have haddock where you can swap out the haddock for cod and you’ll get the same results. I like to serve this with a little bacon on top.
And last but not least, split pea soup. I’ve been making this for over 30 years and it’s still one of our favorite cold weather soups. Not only does split pea soup freeze well, but it’s nice and filling as well.

The tomato soup is so yummy and comforting!
I have been making Easy Creamy Lasagna Soup from the abrightmoment.com website. It is so good. It’s hearty and the recipe makes a large amount. You can easily split it at different points in the recipe and freeze one half for another time. I love making it, because for a family of 4, I can easily split it and get two meals. Mavis, you could get 4 and have leftovers!

I forgot to mention that I use Farfalle instead of Lasagna and it works out great.

If you like Thai flavors, I usually make a soup out of roasted winter squash which I puree with onions that have been sauteed, a can of coconut milk, some vegetable broth, and a couple of big dollops of Thai red curry paste. You can used steamed carrots or canned pumpkin if you have some that needs using up, but roasted winter squash is my favorite. I usually top mine with cilantro or thai basil if I happen to have that around. I’d share quantities, but I just kinda make it to taste as I go and depending on what ingredients I have around. It’s a nice warming soup on a cold day.
Seems like I’ve been making lots of minestrone lately. White bean and kale is also a nice combo. And we love split pea too! Thanks for all the great recipes!!

We really like Zuppa toscana and Hamburger soup. Most recently, I tried a chicken pot pie soup where you make the crust but bake it separately with cheddar and herbs to use as crackers, and we loved that as well.
