I don’t know what the zucchini situation is like at your house these days, but at our place we are on zucchini overload. Last night I tried out a new zucchini oatmeal waffles recipe and HOLY COW MAN… after just one bite I knew I had a winner.
In fact, these zucchini oatmeal waffles were the best waffles I have ever had in my entire life. Seriously. They are stick to your ribs hearty and freakin delicious to boot. Plus, HELLO… they are a great way to use up excess zucchini. ๐
They are so good in fact, I plan on shredding a bunch of zucchini on popping it into the freezer so I can make these waffles during the winter months. You’ve got to try them.

PrintZucchini Oatmeal Waffles – The Best Waffle on the Planet
Ingredients
1 1/2 cups milk {I used 2%}
1 cup shredded zucchini
2 eggs
2 tablespoons butter, melted
1 1/2 cups whole wheat flour
1 cup quick-cooking oats
1 tablespoon baking powder
2 tablespoons brown sugar
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
Instructions
Mix the wet ingredients together first, then mix in the dry ingredients.ย Cook on a lightly greased {I always use butter} waffle iron. ย Serve with warm syrup.

Sounds like they aren’t being pollinated, long term try to attract more bees. In the short term you can break off the male flowers and tap the pollen into the female flowers.

Have you made “zucchini sauce” – like applesauce? Cook peeled shredded zucchini, sugar & lemon juice. Puree and add cinnamon and nutmeg (or whatever you like in your applesauce). I wish I had more zucchini. I think this would freeze well also.

I made these for dinner last night. The garden is going crazy right now, so we’ve got zucchini coming out of our ears. We also had scrambled eggs (gotta keep up with the chickens) and corn-on-the-cob (crazy garden has no respect for breakfast-for-dinner plans) and everyone (me, hubs, 2 little daughters) licked their plates clean. 12 regular waffles, not belgium. I put 1/3 cup batter into each waffle plate to make the waffles. My older waffle maker required 6 minutes for the waffles to not be sticking, and made a deeper color. Yours might take less time than that, so keep an eye on it and find that magic moment where they no longer stick or separate if you try to open the waffle maker. At 5 minutes mine were still sticking and would separate between top and bottom parts when I tried to carefully open the waffle maker so I reclosed the maker and left go for another minute. I used a wooden skewer to run underneath any waffle part that might be a tiny bit stuck around any squares, and it would release easily that way and not scratch the waffle maker. Just run it underneath between the waffle maker squares, worked like a charm.

Do you need to do anything about the extra moisture in the zukes? Blot the shredded pieces or sit in a colander? Thanks!!!

You mentioned using frozen zucchini. I’ve never used frozen shredded zucchini in anything – this is my first year for it. Did you add it frozen or defrost and drain? Thanks! Looking forward to trying this recipe very soon!

DELICIOUS!!! I cut the amount of salt in half for mine. I could taste the sugar and cinnamon in light, perfect amounts. I will make these again, and might even try making a savory version using garlic powder, herbs, added bits of carrot or red pepper for color, all instead of sugar.
MAKES 12 REGULAR WAFFLES, not belgium.
AMOUNT: 1/3 cup batter in each waffle plate.
COLOR: Deep golden brown
TIME: 6 MINUTES IN MINE.
6 minutes time in my older waffle maker in order for the waffles to not be sticking or top and bottom separating if I tried to gently open my waffle maker.
At 5 minutes mine were still sticking and would separate between top and bottom parts when I tried to carefully open the waffle maker so I re-closed the maker and left go for another minute. Each maker can vary so find the magic time for your own that it does not stick. My maker does not have a temperature control like some.
WOODEN SKEWER TO HELP POP THEM OUT:
